Bush Tomato (Akudjura)
Bush Tomatoes grow on small shrubs or bushes. They grow well in the dry atmosphere of the Central Desert. They are also found in the outback of N.S.W., Northern Territory, Western Australia and South Australia.
Bush Tomato has a pungent spicy flavour which goes well with any of the foods that one would normally associate with tomatoes. It is normally used ground, as a seasoning rather than as a tomato and has a strong flavour, reminiscent of sun-dried tomatoes or tamarillos. It is particularly suitable for use in casseroles and soups giving a rich robust flavour. This bush food has a variety of uses but should be used fairly sparingly. Its strong flavour can quickly overpower more delicate food, especially if used in quiches or flans that have a high content of eggs or cheese.
The Bush Tomato compliments the traditional ingredients used in Mediterranean style cooking such as eggplant, olives or capsicum.
Ground Bush Tomato is best kept cool and dry, and has a considerable shelf life.
