Saltbush (Atriplex nummilaria)

The leaves from this Australian native plant retain some of the saltiness from the soil in which they grow. A great alternative to using traditional salt, these tangy little leaves have a hint of mint and thyme and go well with lamb dishes.  I've found them to be a great flavour enhancer and use them in many recipes such as terrines, pates, stir fries and soups.
